It's pretty straight forward to make, but absolutely divine:
For the sauce you need:
- 3 cloves of chopped garlic,
- 1" cube of finely chopped ginger
- 2 chopped chillies
- 300ml coconut milk
- 1 lemon grass stalk, or the juice from half a lemon
- 1 tbsp coconut oil (butter would be fine)
- 1 vegetable Oxo cube
- Handful of peanuts
- Bunch of coriander
Gently fry the garlic, ginger and chillies in the coconut oil for 2-3 minutes, then the coconut milk and lemon grass and leave on a low heat for 5 minutes. Add the chopped coriander and peanuts, then leave on the heat for a further 2 minutes and your done.
Just pour the Thai sauce over some stir fried veg (we're having leeks, pak choi, asparagus and peppers), your favourite meat (I'm going for salmon and Jo's got tofu) and Vermicelli noodles.
