I must warn you, I very rarely weigh, measure or time anything when i cook, it's quite amazing the way I manage to blag my way through it, but here is a rough guide.
Soften 1 chopped onion in a tablespoon of butter, add three minced garlic cloves and 1inch cube of chopped ginger for 5 minutes.
Mix in 2tsp of Garam Masala and half a tin of tomatoes. Leave to simmer on a low heat for 10-15 minutes or until the sauce has thickened.
In separate pan fry your meat (I've used chicken thighs, diced beef and tofu and they all work great) in a healthy dollop of butter.
When the meat is cooked, add the tomato base and mix together.
Add about 300ml of Coconut milk and 2 tbsp of either Korma Masala or Tandoori Masala powder (you can get these from most supermarkets), and chilli powder to taste.
Leave to simmer for 10 minutes.
Add a handful of chopped coriander and 2 tablespoons of desiccated coconut.
Leave on the heat for a further 5 minutes, then serve.
I like to garnish with a bit more coriander and flaked almonds, just because it makes me feel like a proper chef! Let me know what you think.
